Eat Like Royalty With These Stupid-Simple Mug and Microwave Meals

If you suck at cooking, then join the club because so do I! In college I tried every variation of ramen and came away with a few gnarly stomach aches. If you're living by yourself for the first time, or are a cooking novice, this is the list for you!

I've scoured the Internet for the ten easiest snacks/desserts/dinners that only require a few ingredients, a mug and a microwave.

After reading this list, there is no reason for you to say you're not a cook. All it takes are some baby-steps. Together, we'll get there.

1. Microwave Meatloaf

Who doesn't love a good meatloaf? Like, seriously, who doesn't.

All you need for this extremely fast and high-protein meal is : 

  • 2 tablespoons 2% milk
  • 1 tablespoon ketchup
  • 2 tablespoons quick-cooking oats
  • 1 teaspoon onion soup mix
  • 1/4 pound lean ground beef
  • additional ketchup, optional (except not) 

Next, you're going to combine the milk, ketchup, oats and soup mix. Then, spread it on top of your ground beef that you've placed in a microwave safe mug with some non-stick spray. Microwave on high for three minutes, then let sit for three minutes.

2. Mug Chilaquiles (Think Breakfast Nachos)

If you want to get adventurous with these mug chilaquiles (and who wouldn't?) all you're gonna need is:

  • 1 egg
  • 1 tablespoon milk
  • salt
  • ground black pepper
  • 1 tablespoon sharp cheddar cheese
  • 5 tortilla chips, divided
  • 1 tablespoon salsa
  • sour cream
  • queso fresco
  • chopped green onion

Basically, whisk the egg in your cup. Add your cheese and some tortilla bits, microwave for a minute and 30 seconds, then add the rest of your ingredients on top. Viola! You have delicious and simple Chilaquiles in a matter of minutes.

3. Mac-N-Easy-Cheese

For when you need a quick meal and want the easiest possible solution, may we present you with: the fastest Mac-N-Cheese of your life? 

All you're going to need is: 

  • 1/3 cup pasta
  • 1/2 cup water
  • 1/4 cup 1% milk
  • 1/2 cup shredded cheddar cheese

Add the pasta and water to your mug, then microwave on high for 2 minutes then stir. Do this again, and maybe one more time to make sure your pasta is cooked. Afterwards add in the milk n cheese, stir, and microwave for another minute and you're done!

Now, start planning those study-session dinner parties because they're going to be a breeze.

4. Mug Baked Granola

Hell yeah to being healthy! Thankfully, we have this wicked easy granola recipe you can whip up in a flash. All you're going to need is: 

  • 1/2 cup quick cooking oats
  • 1 tbsp ground flax seed
  • 1 egg
  • 1/2 cup milk
  • 1/3 of a banana, mashed
  • 1/4 tsp cinnamon
  • 1/2 of an apple, chopped
  • 2 tsp honey

Add everything in a bowl together, mashed up, then microwave it on high for 2-3 minutes. When it's done add some milk or almond butter to it for a delicious and crazy easy breakfast.

5. Easy Breakfast Quiche

Who says quiche is only for adorable brunches thrown by friends who have it way more together than you do? 

  • 1 egg
  • 1 1/2 tablespoons milk
  • salt
  • ground black pepper
  • 1/4 of a bagel (or similar amount of French bread, etc.)
  • 2 teaspoons cream cheese
  • 1/2 slice prosciutto or ham
  • fresh thyme leaves or fresh chopped chives
  • Dijon mustard

First, you're going to want to beat your egg and milk together with a fork in your mug, then break up your bread item and sprinkle it on in there. Then, mix in your cream cheese and chives. Microwave on high for a minute and ten seconds and you're ready to start brunching by yourself!

6. Two Minute French Toast

If mom only made French toast on Christmas morning, fear not! Now you have basically the easiest French toast recipe you'll ever need. 

You're going to need: 

  • bread
  • 1 egg
  • butter
  • 3 tablespoons of milk
  • cinnamon

Basically, you get to add everything together and microwave it. It involves some cubing of your bread, which can easily be accomplished with your hands.

7. Nutella Mug Cake

If you have a sweet tooth, this is the recipe for you. It takes minutes to make and you'll go into a chocolate coma after you try it. 

You're going to need: 

  • 4 tablespoons self-rising flour
  • 4 tablespoons sugar
  • 1 egg
  • 3 tablespoons cocoa powder
  • 3 tablespoons Nutella
  • 3 tablespoons milk
  • 3 tablespoons vegetable oil

Mix all your ingredients in a bowl and microwave it for 1.5-3 minutes. After that, you're all set! You can make your own whipped topping if you desire, but if you're on the go this simple recipe will work just fine.

8. Vegan Tofu Scramble

Are you a vegan? Well, don't worry because I have you covered! This is a delicious and nutritious vegan scramble that will make eating healthy a breeze. No special instructions, just mix the following ingredients together and hit the nuke button for two minutes!

  • 1/2 block firm tofu, crumbled
  • 1 tbsp. soy sauce
  • 3/4 cup nutritional yeast (aka "vegan crack")
  • 1/2 Tbsp. lemon juice
  • 1 bunch spinach
  • 1 handful `shrooms
  • seasonings (I use salt, pepper, garlic powder, and turmeric) to taste

9. Italian Meatball Stew

The perfect recipe for cold winter days when you don't want to leave your apartment, or sick days when you can't afford Seamless. What you're going to need for this delicious stew is: 


  • 4 frozen beef meatballs 4
  • 1⁄2 cup marinara sauce (125 mL)
  • 1⁄3 cup ready-to-use beef broth (75 mL)
  • 1⁄3 cup drained canned mixed vegetables (75 mL)
  • 2 tbsp drained canned or jarred (30 mL)
  • mushroom pieces
  • salt and ground black pepper

After you have all your ingredients together, cook your meatballs for a minute, then cut them in half. Then add in the rest of your ingredients and microwave for another two minutes. Add salt and pepper to taste. There you have it! The easiest stew you'll ever make.
