Here's the thing: Phelps was eating all of that while he was super young. So a few years later, in 2012, he toned it down a bit. The calories were intense, but it was all pretty healthy and nowhere near 12,000 daily calories from 2008.
There's also the whole thing that swimmers burn more calories than basically any other person in the world. Phelps swims for about 5 hours a day, 6 days a week. He's burning thousands of calories, so it's only natural that he'd need to eat all of that back.
